Good afternoon and Happy Friday! I’m a little late posting again but I have some good eats for ya! :-).
Dinner
Let’s start with last night’s dinner. It was chock full of veg! Baked eggplant parm, grilled squash, salad and a baguette slice.

I ended up going to Troy’s last softball game of the season after dinner. Unfortunately, they didn’t win but they tried really hard! Isn’t that what really matters? ;-).
Workout
For my Friday workout, I took a 6am interval class at my gym. I’ve never taken this particular class before and I thought it was just ok. The instructor was kind of blah and I didn’t like the exercises she chose. Maybe I’m too picky with instructors? I felt good after class but not like I had an amazing workout. Can’t win ’em all I suppose :).
Breakfast
I was extremely hungry when I got home and cooked up a yummy breakfast for myself. I was craving lots of protein so I made a fried egg with a little cheese on top, peanut butter toast and a juicy peach.
This breakfast was satisfying and delicious, just what I needed to start the day :).
I’m still at work and have been since 8:30am, yikes! I’m not sure what the plan is for tonight but I’m definitely ready for some weekend fun! Hope everyone is having a great day so far…:-D

Feelin’ Oatty

It’s almost noon! I should probably post last night’s dinner and this morning’s breakfast, don’t ya think?! ;-).
Dinner
After taking BodyPump at 5:30pm last night, I headed straight over to Troy’s for a shower and some delicious food! Troy’s dad is an amazing cook and prepared a huge feast of chicken parm, pasta with garlic and olive oil, a baked ziti/lasagna dish, veggies, salad, fruit salad and watermelon.

I also enjoyed a few pieces of watermelon for dessert. Everything tasted great!
Workout
This morning I headed to the gym at 5:30am to do a cardio/interval training workout. My workout went like this:
- 5 minutes incline walking (Pace 4.0, Incline 7.0), 2 minutes of running (1st min at 6.5, 2nd min at 7.0)
Alternate the intervals for as long as you like! I did the interval workout for 20 minutes then hopped on the elliptical for 15 minutes. Boy, it was a sweaty one!
Breakfast
I was feelin’ oatty this morning! I haven’t made them in awhile and had some extra time on my hands.
My oatmeal bowl included:
- 1/3 cup old-fashioned oats
- 2 tsp. vanilla extract
- 1 tsp. honey
- Dusting of cinnamon
- Sprinkle of pecans
- Tiny blob Jif
- Tiny blob Peanut Butter & Co. cinnamon raisin swirl

I also enjoyed a perfectly ripe summer peach with a side of morning sunshine :).
Today is my long day at work so I’m praying it goes by in a flash! It’s such a nice day here too. The storms came through last night so the humidity is gone…for now! I may stop by Troy’s softball game tonight if I get outta here in time. Have a wonderful day everyone!
