Moose, Crocs, Kettle Corn & More!

I had the best weekend!  I hope everyone did as well.  Here are a few highlights from this weekend:

  • Interpol concert (AMAZING!)
  • Delicious dinner with great friends
  • Birthday party – It was a double whammy, they’re twins!
  • Saratoga kettle corn
  • Plum Dandy
  • Moose attacks/Croc attacks (No, I did not get attacked by either of these animals)

I got about 8 hours of sleep total this entire weekend but I still got up early for an 8:30am BodyPump class on Saturday and an 8am spinning class this morning.  Now that’s what I call dedication!  I will definitely  be heading to bed super early this evening :-).

Before spinning, I enjoyed a satisfying breakfast of protein-packed yogurt and fiber cereal.

The Mix:

  • 1 cup Stonyfield vanilla
  • 1/4 cup Kashi autumn wheat squares
  • 1/4 cup Newman’s Own cinnamon fiber flakes
  • 1/4 cup Honey Nut O’s
  • Sprinkle of sliced almonds and raisins

Troy and I enjoyed a very relaxing afternoon.  We headed downtown Saratoga Springs to enjoy a Sunday afternoon frozen yogurt date at Plum Dandy.  It was a spontaneous date so, unfortunately, I was unprepared and had no camera with me.  I enjoyed a bowl of fruity goodness – pomegranate + strawberry froyo topped with huge blackberries.  So good!  We couldn’t resist the smell of kettle corn cooking at a sidewalk stand as we were walking by so Troy bought a small bag for us to share.  It was still warm and so delicious!  That stuff is addicting!  :-D.

After our little date, we headed to Troy’s house to relax and watch television.  I learned many new facts about moose and crocodiles.  For instance:

  1. Do not anger a moose.  It will charge and attack you, especially if it’s a female moose protecting her young.
  2. Moose tend to attack dogs since they remind them of wolves, which are big predators to the moose species.
  3. Moose do not distinguish the difference between dogs and dog owners.  In the moose’s eyes they are both considered part of the wolf pack.  The moose will attack the human too! (And to think, I thought moose were nice.  Go figure!)
  4. Crocodiles can run up to 35 miles per hour on their hind legs (whoa!).
  5. Crocs can go up to 2 years without eating and still survive.
  6. Don’t swim with crocs, they will swallow you whole, yikes!

After watching educational television and hoping I didn’t run into a moose on the ride home, it was time for dinner!  It’s Sunday night which means family dinner :-).  My mom fired up the grill and cooked us a lovely dinner of grilled marinated chicken, grilled eggplant, baked oven fries and a salad.

This was a delicious summer meal and was exactly what I wanted after a fun-filled weekend.  Tonight’s agenda is finishing up the rest of my laundry and getting at least 9 hours of sleep.  I have an early day tomorrow, goodnight!

This afternoon I met up with Rebecca for a froyo date.  She was in town for the day and hadn’t checked this place out yet.  Frozen yogurt on a Monday? Yes please!037

We met at Plum Dandy and got straight down to business.  I had a hard time making a decision between getting a dessert flavor or a fruity flavor.  I sampled the red velvet cake (which was awesome) but I was definitely in a fruity mood.  I decided on pomegranate and a little plop of vanilla topped with strawberries and blackberries.

When I got home, my mom was in the midst of making enchiladas for dinner!  These babies are amazing and simple to make.  First, brown 1 lb. lean ground beef and add the seasoning packet.  Once the meat is cooked, make 6 soft tacos, place them in a baking dish, add taco sauce + lots o’ cheese and bake!  They were baked at 400 for 25 minutes.  Easy!

Fresh out of the oven 🙂041 Corn on the cob + salad on the side.  044Corn on the cob screams summer!  I enjoyed another piece of corn with my dinner as well.  It was majorly stuck in my teeth, but that’s what floss is for right? 046 Summer meals are the best.  There are so many different fresh fruits and vegetables in season right now and I’m loving the great quality of everything.  I am savoring the produce now because summer goes by way too quickly in NY and before I know it, I’ll be seeing snowflakes…eek!

Question of the evening: What are your favorite summer produce items?

Fresh berries and corn on the cob are what I wait for every summer, I love them!
