Hope everybody is having a wonderful Saturday!
My Saturday started at the very early hour of 5:30am to shower, eat breakfast, and drink a cup of coffee before heading up to Glens Falls to help out at the Girls On The Run 5K race. There were between 800 and 1,000 runners total, so we were definitely busy all morning! My mom and I helped the girls and their families register, handed out t-shirts + goody bags, and set up the post-race refreshments. It was a lot of fun!
When we arrived home, I whipped up a batch of flourless peanut butter cookies for my gluten-free cousin Anthony. I may or may not have had a few in the process. The rest of the afternoon was spent doing miscellaneous chores around the house followed by a quick trip downtown for a couple errands. And before I knew it, it was time for dinner, phew!
For dinner we enjoyed spice-rubbed ribs. We bought them pre-cooked covered in BBQ sauce (which may gross some a lot of people out!). Sometimes we smoke our own, but it literally takes allllll day. With the pre-cooked ribs, we usually wash off all the gloopy BBQ sauce then re-season them with our own spice rub. They come out so much better that way! These were definitely not homemade, but worked in a pinch!

Saturday night dinner. I had two more ribs as well!
Not sure what’s in store for tonight yet, I’m going with the flow!
