It’s not even 9am and I’ve already gone to spin class, fed the fur baby, and made my own breakfast and coffee. Love being productive in the morning. I have a fun day of shadowing a local dietitian ahead of me, so I’m pretty pumped!
This mornings meal – can’t go wrong with this breakfast!
In the bowl:
- 1/3 c. oats
- 2 tsp. vanilla extract
- 1/2 sliced banana
- PB blob
Side of summer berries!
Both delicious and filling!
I’ve been thinking about all the things I’m doing and places I’m visiting for the rest of the summer and I’m pretty excited! Items on the list include:
- My birthday next week!
- A trip to Syracuse with my mom
- A trip to the Hamptons!
- Capital District NY Eat, Drink, Blog Brunch! (Here’s a recap of last years event!)
- Family visits for the racing season in Saratoga
- Two weddings
Whew, that’s a lot! I don’t mind though, I love being busy!

What a crazy morning it’s been around here!
I had great plans of getting up at 5am and heading to a 5:30am Gravity class at my gym followed by some cardio. I set my alarm last night, laid out my workout clothes, and even had my water bottle ready to grab. Well, I woke up at 6:42am and wondered what the heck happened! Apparently, the power had gone out sometime after I went to bed and it wasn’t back on yet. I thought, “Oh well I can get ready and go now“…WRONG! My car was parked in the garage…no power = no opening the garage door! Thankfully I didn’t have to wait too long for the electricity to come back on. It came on around 8:30am – just enough time to brew some coffee and catch a little bit of the Today Show before finally heading to the gym! I ended up getting to the gym around 9am (a little later than I would have liked but I just went with it!). My workout went something like this:
- 20 min. elliptical – increasing resistance and incline every few minutes
- Weights – biceps, triceps, shoulders, chest, abs
- 15 min. incline walking on the treadmill (4.0 at 7.0 incline)
It was humid in the gym today, so I was definitely sweaty by the time I was finished!
I refueled with a small bowl of oatmeal topped with peanut butter.
Time for a shower!

Good morning! Another Monday is upon us and I’m ready to take on the week! I don’t know about you, but I secretly like Mondays. It feels good to be back in a routine that sometimes is lacking on the weekends.
For dinner last night, my mom, dad, and I enjoyed grilled marinated shrimp, grilled zucchini, and baked potatoes.
I went back for seconds on the grilled zucchini – it was so good!
I am currently enjoying my standard bowl of oats topped with banana slices and melty peanut butter (heaven!) and a side of summer berries. After breakfast, I am heading to the gym for a spin class then to work for the day!

What’s your favorite type of seafood?
I love all types of seafood – crab, lobster, tuna, shrimp, mussels, and more! As for vegetables, I grill them all!

I completed a weight workout on my own today! It wasn’t easy at first, but then I got into a groove. The thing about my gym at home is there are way too many guys in the weight area lifting weights that can’t lift weights without swearing or grunting. I also feel like everybody is staring at me – awkward! I know that’s probably only in my mind, but that’s how I feel sometimes.
I started off my workout with 20 minutes on the treadmill – 10 minutes @ 4.0, zero incline, and then 10 more minutes of intervals (2 minutes at 4.0 with a 7.0 incline, and 1 minute at 6.5 with a 1.0 incline). I was super sweaty by the time I was finished! I then headed over to the weight area and did various exercises (following Holly’s recommendations), and ended up covering legs, hamstrings, biceps, triceps, shoulders, and abs! For each exercise, I did 3 sets of 15 using a heavy enough weight that my muscles felt fatigued by the end of each set. I also split up my weight exercises with 10 minutes on the elliptical about half-way through. Although BodyPump and other weight lifting classes will always be my favorite, this was a great alternative in the meantime. I have a feeling I will be sore tomorrow!
After my workout, I came home, quickly showered, and started on lunch!
I filled a Joseph’s pita with a few slices of buffalo chicken and greens from my mom’s garden.
Sharp cheddar kettle chips on the side.
Nectarine – gotta get my fruit in.
My mom is currently baking ginger cookies and I can’t wait to snag a couple fresh out of the oven! The rest of my day will be spent doing laundry and cleaning up a bit around here. I think I’m going to see Troy later too!!

I don’t know about you but I had a weird night of sleep last night. I woke up pretty much every hour, but somehow still feel somewhat rested this morning – strange! After waking up, I headed down to the kitchen to make myself a delicious bowl of oats with some awesome toppings.
Vanilla oats topped with banana and peanut butter blobs!
In the mix:
- 1/3 cup oats
- 2 tsp. vanilla extract (mixed in right before I took the oats off the stove)
- 1/2 sliced banana
- About a teaspoon each of creamy Jif and Peanut Butter & Co. cinnamon raisin swirl peanut butter!
I happened to find the PB & Co. peanut butter tucked away in the cabinet and immediately thought of Holly! I know how much she loves her cinnamon raisin swirl peanut butter. I forgot how good this stuff was!
I also enjoyed a side of strawberries.
After I type up this post, I’m going to brew myself a cup of coffee from my Keurig! I’m also planning on heading to the gym for a workout in a little while. I mentioned to Holly on Twitter a few days ago that my weight training routine felt a little boring and un-motivating since I don’t have my beloved BodyPump class while I am at home (it’s so much easier when somebody tells me what to do!). It’s hard for me to motivate myself to do weights on my own, but I really need to! She responded by writing up an awesome post on her blog about how to enjoy weight lifting. I know many of us feel the same way about weight training, so if you feel stuck in a rut, definitely check out her post – it’s very helpful!
Time to make the coffee!

What a jam-packed day its been! The morning started off nice and relaxing, but Troy, his brother, and I had plans to do a little shopping this afternoon. Troy’s family is getting ready for an upcoming trip to Europe, so the boys needed some new shoes and clothes. I was mainly the helper, but couldn’t’ resist buying a few summery items for myself. You know how that goes, right ladies?!
We stopped at Fresh & Healthy Café mid-shopping for a smoothie break.
I got the peach + strawberry blend. It was amazing and refreshing – a close second to Jamba Juice!
After a day full of shopping, I was hungry for dinner! Luckily, mom was cooking panko chicken – one of my favorites!
Topped with tomatoes and arugula + coarse sea salt.
Served with roasted red potatoes and asparagus on the side.
I’m about to park myself on the couch for the evening! (I really know how to be wild on a Saturday night, huh?) Have a wonderful evening!
