Tonight’s dinner was a summer-themed one! It hit almost 90 degrees here today, so a cook-out was most definitely in order. We grilled up some buffalo pork sausages along with caramelized onions – which were also cooked on the grill in the cast iron skillet!
Alongside, I enjoyed roasted cauliflower and vegetarian baked beans.

In other news, I’ve been eyeing the Nook Color by Barnes and Noble and I think I’m going to get it! I love that I can read on it, access the internet, and not break the bank all at the same time. Many of the reading assignments for my classes are posted online as PDF’s and the Nook would make getting my reading done more convenient!
Is anybody else out there thinking about getting a Nook or have heard good things about it?

After a trip to the grocery store this morning, my mom and I decided the shrimp at the fish counter looked really good. The weather was pretty chilly and cloudy outside so we grilled the shrimp inside on the grill pan instead!
We placed our shrimpies on skewers after marinating them in olive oil, lemon juice, sea salt and pepper.
I also enjoyed steamed green beans and roasted red potatoes on the side.
The shrimp were very good! Restaurant-quality good.

Yesterday was Lucy and Carey’s bachelorette party! Yes, two lovely brides-to-be.
We kicked off the celebration by having a late lunch at Maestro’s in Saratoga. This was the first time dining at their new location and trying out their newly updated menu! I split a crab cake and a grilled vegetable sandwich with brie and cheddar with my friend Erin. After lunch, we headed down Broadway to a nail salon to get manicures before the big night out!

After getting our nails done and getting dressed, we headed out to the Harem Nights themed bachelorette party thrown by Lucy’s best friend and Carey’s sister. They did an amazing job decorating!! They hired a henna tattoo artist, a belly dancer (we got to learn a few moves too!), and even had a tarot card reader. It was so much fun!

Life has been so busy this past week/weekend! Troy graduated and I attended a fabulous bachelorette party (more on that later).
I spent most of last week in New Jersey for Troy’s graduation. The actual graduation dinner and ceremony took place this past Thursday. The dinner was held at Meadow Wood Manor and started off with a cocktail hour and appetizers, followed by a buffet dinner. After dinner, the founder of the school spoke about the graduating class and then each student was called up to receive their certificate. Before heading to the ceremony, everyone got ready at the hotel Troy’s mom and brother were staying at. Here are a few pictures from that night!

Good evening friends!
We’ve accumulated a lot of leftovers over the past couple days, so tonight was the night to eat a little bit of everything! My plate consisted of pulled pork, beans and greens (last time I swear!), baked beans with roasted red peppers, and leftover rosemary roasted potatoes from last night.
I am so excited because tomorrow I am headed to New Jersey to see Troy! He is graduating this week and I couldn’t be more proud of him. He is also moving out of his apartment by the end of this week so I’m heading out early to help him pack up and take home any overflow of stuff!
