It’s Monday again and I have yet another pizza recipe to share! This is the third week in a row where I have made pizza for dinner on a Monday night! Tonight’s creation was extra special thanks to some delicious spicy chorizo I picked up from the grocery store this weekend.
- Boboli thin crust pizza crust
- Wegmans pomodoro sauce
- Mozzarella cheese
- Sliced mushrooms
- Sliced onions
- Spicy chorizo
Ready for the oven!
The spicy chorizo made this pizza! It was very flavorful and really easy to make. The chorizo was already cooked when I bought it, so all I had to do was cut it into slices and top my pizza.

I also sautéed some spinach and the rest of the mushrooms that never made it onto the pizza for a side dish.
I highly recommend you give this a try, especially if you like your pizza spicy! You could also use your favorite kind of pork, turkey, or chicken sausage, or even bacon in place of the chorizo if you’re not into spicy food.

Hello and Happy Monday! It was a fabulous day here, which probably had a lot to do with the fact that it was 85 degrees in Syracuse today!!
I wanted a quick and healthy dinner tonight and had picked up a Boboli pizza crust on sale at my local grocery store this past weekend. Pizza sounded perfect! I also needed to get in about a day’s worth of veggies into my diet so I figured vegetable pizza would be the best way to do it.
- 1 Boboli thin crust pizza crust
- Wegmans Pomodoro sauce
- Sliced zucchini
- Sliced mushrooms
- Sliced onion
- Mozzarella cheese
Fresh out of the oven!
Loved this pizza! I’m glad I have over half of it left to eat throughout the week.
Off to enjoy the last of the unusually warm temps before the cooler air comes back tomorrow!

The Ninja has returned! The weather here has been warming up leaving me craving cool, creamy, and delicious fruit smoothies. If you’ve been a V.A. reader for awhile, you may remember my Ninja was given to me as a gift from Troy on my birthday.
I decided to make my first fruit smoothie of the season by creating one of my favorites – a banana berry smoothie!
Into the blender went:
- 1/2 frozen banana
- Handful of frozen berries (strawberries, blueberries, blackberries, raspberries)
- 4 oz. grapefruit juice
- 3-4 oz. water
Banana berry goodness.
I anticipate making many more in the weeks to come!

Hello and Happy Sunday!
I had a wonderfully relaxing and productive day today. I started off my day on the right foot by attending a Body Pump class at my gym. I arrived early to get “my spot” then warmed up on the elliptical for 15 minutes. Body Pump totally kicked my butt this morning! My biceps were feelin’ the burn less than half way through the track, yikes!
The rest of the day was spent giving my apartment a thorough cleaning, relaxing, and cooking up a delicious Sunday dinner!
On the menu – Whole wheat pasta with baked chicken breasts and sauteed spinach and mushrooms all topped with my new favorite tomato sauce. I also put a sprinkling of mozzarella cheese on top .
I baked 2 chicken tenders seasoned with salt, pepper, and garlic powder in the oven at 400 degrees for about 20 minutes. While the chicken was baking away, I got to work on my mushrooms and spinach.
A few minutes before the chicken and veggies were done, I cooked up the pasta and heated up the tomato sauce.
I was sitting down to eat 20 minutes after I started cooking. Can’t beat that!
I’m off to organize some papers for the upcoming week while watching America’s Next Great Restaurant then heading straight to bed! Enjoy the night!

I wanted to share a delicious breakfast that I’ve enjoyed numerous times this past week. It’s quick, easy, and delicious .
I started by toasting up a Thomas’s everything bagel thin. While that was toasting away, I fried up an egg using my perfect egg pan that Troy got me for Valentine’s Day this year (it’s awesome!). I spread the goat cheese I had leftover in the refrigerator from goat cheese and mushroom pizza onto my toasty bagel thin. Finally, I placed the egg right between the two halves and got ready to dig in!

So flavorful and a healthy way to start the day! Win-win .
I have a few fun things going on this weekend. I plan to attend my 8:30am Saturday morning step class at my gym and I also have a sushi date planned with my friend Kathryn. You may remember her from one of my very first Syracuse outings (she has beautiful, long brown hair and is also modeling an apple for the camera!).
I also have plans to attend a Sunday morning Body Pump class, get some homework done, clean my apartment, and relax!
