Get ready, tonight’s dinner was a good one! I made an easy and delicious goat cheese and mushroom pizza. After getting back from the gym, (Monday is the only day I go in the afternoon!) I quickly prepped and assembled all the ingredients for my pizza.
- Rustic Crust pizza crust
- Two Guys Jersey tomato sauce (SO good! – I picked up a jar when I did a little grocery shopping in NJ)
- Goat cheese (I used a local brand from NY sold at my grocery store, but any kind will do!)
- Chopped crimini mushrooms

After assembling my pizza, I popped it into the oven and quickly jumped in the shower while it was cooking. I had perfect timing because by the time I was done, dinner was ready! I had to cut the pizza crust in half before baking it since I don’t have a pizza stone or a big enough pan. It worked out just fine

This was reallllly good! It only took about 5 minutes of prep work and 15 minutes to bake. Dinners that take 20 minutes or less to prepare are winners in my book Plus, it was a yummy treat for a weeknight!

Greetings from New Jersey!
I arrived here yesterday afternoon to finish out my spring break with Troy. Unfortunately, he had school today and won’t be home until about 3pm. Since I had a good chunk of the day to spend by myself, I decided to take advantage of the beautiful weather here and get my butt outside!
I drove about 5 minutes down the road and arrived at a pretty pond surrounded by a walking path. There were so many people here, and I don’t blame them. It’s 70 degrees here today!

Each loop around the pond took me approximately 10 minutes and I went around the loop 5 times to complete a sweaty 50 minute power walk! Feels good to be outdoors!
I just cracked into a strawberry banana Chobani and am about to dig into a little homework and maybe a movie before Troy gets back. We may have a tennis date this afternoon!

Good evening friends . This day has really flown by! That hour we lost really makes a difference!
Rewind to brunch. I met some lovely ladies for a yummy brunch and decided on a slice of cinnamon French toast and a side of scrambled eggs. I got a mug of French vanilla coffee as well.
Later on, my mom and I headed to our local nail salon to get pampered! I got both a pedicure (my feet really needed it, hello calluses!) and a UV gel manicure. If you’ve never gotten a gel manicure, I would highly recommend it! It NEVER chips and lasts for approximately 2-3 weeks. You definitely get your money’s worth I think! Here is a brief description.
I was feelin’ girly so I chose this perfect pink color called “I’m Indi-a Mood For Love.” Oooh la la!
Now, I’m relaxing at home before dinner. On the menu tonight: vegetable casserole, a nice salad, and fresh Italian bread!

I arrived home yesterday afternoon for spring break! Finally! I never thought March would come…it’s been a loooong winter.
I have plans to meet up with Alicia and Rebecca this morning to catch up and enjoy a delicious Sunday brunch! We are heading to one of my favorite breakfast spots in Saratoga, Country Corner! I’m a big fan of their oatmeal pancakes and homemade jams!
I actually went there with Rebecca last summer!
