Sunday Dinner For One

What’s a perfect dinner to have on a chilly, rainy Sunday evening?  How does meatloaf (even though I dislike the word loaf), buttermilk smashed potatoes & asparagus sound?  This is exactly what I made :).   This meal screams Sunday dinner to me and I’m glad I made it.

I found this meatloaf recipe on Julie’s blog that she found in Cooking Light.  I decided to take my own spin on the recipe and change a few things.  It turned out great and oh so delicious!

Ingredients:

  • 1 pound meatloaf mixture (ground beef, pork and veal)
  • 1/3  cup  dry Italian breadcrumbs
  • 1/2  cup  chopped onion
  • 1  tablespoon  prepared mustard
  • 1  teaspoon  garlic powder
  • 1/2  teaspoon  salt
  • 1/2  teaspoon  freshly ground black pepper
  • 1  large egg
  • 1/4 cup ketchup
  • Cooking spray

Directions:

Preheat oven to 350°.

Combine the meatloaf mixture meat, Italian breadcrumbs, onion, mustard, garlic powder, salt, pepper, and egg into a large bowl.

Shape meat mixture into a 9 x 5-inch loaf or a broiler pan coated with cooking spray. Spread the ketchup over the top of the meat loaf. Bake at 350° for 1 hour or until a thermometer registers 160°. Let stand 10 minutes. Makes approximately 8-10 slices.
