It’s gonna be a hot one out there today! In order to avoid the heat, I headed out for a walk early this morning at 7am. I walked through the park near my apartment and explored some new (and hilly) streets. There were a lot of people exercising and heading to campus already. The early bird catches the worm! 🙂
This morning I had a Sunday breakfast on a Tuesday! My mom and I decided to have a special breakfast since I have things to do tomorrow morning and she will be leaving on Thursday. While I showered, my mom cooked up scrambled eggs, bacon and toast. Yay for Mom!
I am extra tired this morning even though I got a full eight hours of sleep. The change of routine and first week of school always tire me out. Lots of coffee was in order! I made a cup of French vanilla coffee in my Snoopy mug (thank you Troy!). I can’t look at Snoopy and not smile :-D.
I have a few errands to run on campus before I head to my classes. I have Dietetics Practice Across the Lifecycle followed by Graduate Research Methods. Should be an interesting day!

I made it through my first day!
I knew I needed a breakfast that would keep me full and energized for the day so I decided on hot oats served up in my Buddha Bowl!
My Buddha Bowl contained:
- 1/3 cup old-fashioned oats
- 1 tiny squirt of the honey bear
- Jif blob
- 1 Tbsp. Bob’s Red Mill honey almond granola
After breakfast, I headed to spinning class. I loved this instructor so much! I really enjoyed her style of teaching and I was extremely sweaty by the time class was over. Success!
After showering and making a quick lunch, I headed to campus for my first class – biochemistry! There are only four grad students in the class, including myself. This biochemistry course is an introductory course before metabolism begins in October. Some grad students have already taken biochem, so the rest of them will join us after five or six weeks. The material we covered today was mostly a review, plus I learned a thing or five ;-). Homework’s already done, score!
While I was at an evening meeting, my mom so nicely prepared a lovely dinner for me! It’s so nice having her around for the first couple days of classes. She made grilled chicken breasts, a veggie casserole and yummy salads. Please excuse my lack of presentation, I was too hungry!
I am pooped! Heading to bed nice and early tonight. Goodnight!

Tomorrow is the first day of classes at SU…already! I arrived at my apartment Saturday afternoon after a fun-filled send-off back in Saratoga on Friday.
Troy’s family cooked a wonderful and special dinner to celebrate me going away to graduate school. Troy assembled this delicious eggplant bake. The casserole had lots of eggplant, tomato, onion, Italian breadcrumbs, mozzarella cheese and more!
Grilled veggies topped with parmesan cheese.
The Hoover’s always make the best dinners :-D.
For dessert, Mrs. Hoover made me a cake!
It was so perfect I didn’t want to cut into it! But I did anyway…

Once my Mom and I arrived at my apartment on Saturday, we unloaded the rest of the stuff from the car and headed straight to dinner! We chose to get soup and appy’s from the Outback Steakhouse down the road from my apartment.
Chicken tortilla soup. I also ordered the grilled shrimp appetizer but was too hungry to take a picture of it :).
Mom and I spent the night relaxing and watching Meet the Focker’s…don’t judge, I don’t have cable TV!
This morning, we woke up bright and early to head to the gym to take the 8am spinning class. Everybody at the gym was very friendly and polite. The spin class was different from what I’m used to, but it was definitely a great and sweaty workout. The instructor was extremely energetic!
After spinning, it was time to get groceries! My mom and I spent almost three hours browsing through Wegman’s getting everything that I needed…which was pretty much everything! First shopping trips are always long! I’ve missed Wegman’s, it’s amazing!
We decided to get fresh halibut fillets for dinner. They were a bit pricey but it was my first meal in my new place…and Mom paid! Thanks Mom :-D.
We enjoyed roasted potatoes and green beans with the halibut – which we broiled in the oven.
Fresh greens with local tomatoes, sliced onion, carrots and crumbled feta topped with Italian parmesan cheese. So good!
A wonderful first meal!!
I am about to plop down on the couch, watch the Emmy’s for a little bit and drink some tea before heading to bed early. Gotta get my rest for the first day of school! Hope everyone had a great weekend!
Question of the night: What grocery store could you spend hours in?
I could spend the whole day in Wegman’s, Trader Joe’s & Whole Foods! There’s so much to look at and drool over :).

This is it. My last day in Saratoga has finally arrived. I will miss this beautiful town! Syracuse is definitely a lot different than Saratoga, but I’ll find my way around soon enough.
Last night, my BodyFit class was canceled! I was incredibly bummed. I was ready for a really hard workout :(. Instead, I jumped on the treadmill and elliptical for awhile then did some push-ups and abs. Not what I had in mind, but it did the trick.
Troy’s family is having me over for dinner tonight so last night, my mom made a delicious last meal for us before I go. This meal is definitely one of my favorites…panko chicken!
We also enjoyed fresh green beans and mashed potatoes on the side.
It’s cold this morning! I looked at the thermometer outside at 7am and it read 50 degrees…brr! Oatmeal was definitely in order!
My hot bowl of oats included:
- 1/2 cup old-fashioned oats
- 2 tsp. vanilla extract
- 1.5 tsp. brown sugar
- 1 tsp. creamy Jif
- Sprinkle of slivered almonds
- Dusting of cinnamon
There’s nothing like a hot bowl of oats on a chilly morning. Oats are also my breakfast of choice on days when I take spin class. It keeps me full for longer and spinning makes me very hungry! After my spin class at 9:30am, I plan on doing last minute errands, packing, and laundry then spending the rest of the evening with Troy. I am gonna miss him so much!

The past couple days have been such a whirlwind! I’m back in Saratoga again after a busy two days in Syracuse. Yesterday, I attended my department’s orientation meeting. The professors spoke about graduate student expectations as well as many other things. I have a lot of hard work ahead of me and many things to accomplish. I’m ready! After the meeting, I spent the rest of the day picking up my student ID card, registering for classes, buying the necessary books and grabbing a quick lunch of course!
I slept in until 8am today! That is an extremely infrequent event. I guess my body needed the sleep. I started my morning off with a cup of coffee then moved on to breakfast. I decided on a delicious yogurt bowl topped with a freshly sliced peach.
1 cup Stonyfield vanilla + 1/2 cup Newman’s Own cinnamon fiber flakes + peach slices!
I have a few errands to run today before I head out of town for good on Saturday. I have a feeling it’s going to be quite busy :). Tonight is also my last BodyFit class at my gym for awhile. I gotta make it a good one!

I swear I haven’t fallen off the face of the Earth, I’ve just been super busy! Yesterday, I moved the rest of my belongings out to my new apartment in Syracuse. Between spending more than an hour on the phone with Time Warner Cable and climbing three flights of stairs about one hundred times, I am happy to say my new home is all finished :). What a relief!
I’ve been a lazy busy blogger due to all the moving and have not been so diligent with my food photos. I had good intentions of snapping pictures of this mornings delicious breakfast, but unfortunately, I didn’t get a chance to. My mom, dad and I planned on walking to Brueggers to get coffee and bagels then head back here to eat, but we ended up staying there. I guess we were hungry!
These pictures will have to suffice!
I started off with a medium Green Mountain french vanilla coffee
For breakfast, I enjoyed a rosemary & olive oil bagel with light plain cream cheese. I ordered the cream cheese on the side since they always put too much on!
I have a big meeting this morning! At 10am, I have orientation with the Nutrition Science Department at SU, then I have my registration meeting immediately following. I’m both excited and nervous to meet new people and make a good first impression, eek! Wish me luck!

I am a big fan of Brueggers bagels and a few of my favorite kinds are multigrain, everything, rosemary and olive oil and whole wheat!

What a crazy weekend! My mom, dad and I hosted eight family members at our house from Friday until Sunday morning. We had a blast together!
Weekend activities included:
- A day at the races
- Family BBQ
- BodyPump class with my cousins
- Lunch with the girls
- Relaxing pedicures
- Italian dinner
- Lots of laughter!
As you can see, my weekend was jam-packed and instead of feeling rested, I am pooped this morning! 🙂
Since I don’t have to go to work (!), I can finally go to the 9:30am spinning class at my gym again! I love this instructor and wanted to take the class at least one more time before I head back to school. I also have more packing planned, a haircut and my going-away dinner on the agenda for today/tonight!
