Brr! It was 50 degrees outside this morning! At night, I usually sleep with a window fan on. I decided to turn it on for a little while before I fell asleep just to cool the room off a bit. Well, I ended up falling asleep and left it on all night! My room was an igloo when I woke up and my toes had turned into little ice cubes. Good thing my fleece pants aren’t packed yet!
I needed to warm up asap so I went downstairs and cooked up some vanilla oats for my mom and I for breakfast My oatmeal bowl included:
- 1/3 cup old-fashioned oats
- Lots of vanilla extract
- Pecan halves
- Blob of creamy Jif
- Blob of Peanut Butter & Co. cinnamon raisin swirl
I was in vanilla heaven!
I would have gone outside to take pictures of my beautiful bowl of oats but it was too chilly! I also enjoyed Green Mountain breakfast blend coffee on the side. It was my last k-cup boo :(. I really want more chocolate glazed donut coffee!
I usually take BodyPump on Saturday mornings but when I woke up this morning, my body was aching and so sore! I feel bad about missing my squats and chest presses but a good stretch was callin’ my name today. I headed to the 8:30am yoga class instead. I especially enjoyed this class. The instructor was knowledgeable and was very nice! Most yoga classes at my gym are about an hour but today’s class was an hour and half. We were able to do a lot more poses and deeper stretching along with a longer relaxation at the end. It was just what the ol’ body needed!
I came straight into work after yoga. Lucky for me I work in a spa so I will be getting a massage today as well :). Then, it’s off to the mattress store! I’m buying a bed for my new apartment and I can’t wait to test out a few different mattresses. This mattress store is also located in Syracuse so I can test them out in Saratoga then give my order to the other store. Love that! I’m thinking I want a really soft, pillow-y, comfy bed :-D. I like to feel like I’m snoozing on a cloud!

Good afternoon and Happy Friday! I’m a little late posting again but I have some good eats for ya! :-).
Let’s start with last night’s dinner. It was chock full of veg! Baked eggplant parm, grilled squash, salad and a baguette slice.

I ended up going to Troy’s last softball game of the season after dinner. Unfortunately, they didn’t win but they tried really hard! Isn’t that what really matters? ;-).
For my Friday workout, I took a 6am interval class at my gym. I’ve never taken this particular class before and I thought it was just ok. The instructor was kind of blah and I didn’t like the exercises she chose. Maybe I’m too picky with instructors? I felt good after class but not like I had an amazing workout. Can’t win ’em all I suppose :).
I was extremely hungry when I got home and cooked up a yummy breakfast for myself. I was craving lots of protein so I made a fried egg with a little cheese on top, peanut butter toast and a juicy peach.
This breakfast was satisfying and delicious, just what I needed to start the day :).
I’m still at work and have been since 8:30am, yikes! I’m not sure what the plan is for tonight but I’m definitely ready for some weekend fun! Hope everyone is having a great day so far…:-D

It’s almost noon! I should probably post last night’s dinner and this morning’s breakfast, don’t ya think?! ;-).
After taking BodyPump at 5:30pm last night, I headed straight over to Troy’s for a shower and some delicious food! Troy’s dad is an amazing cook and prepared a huge feast of chicken parm, pasta with garlic and olive oil, a baked ziti/lasagna dish, veggies, salad, fruit salad and watermelon.

I also enjoyed a few pieces of watermelon for dessert. Everything tasted great!
This morning I headed to the gym at 5:30am to do a cardio/interval training workout. My workout went like this:
- 5 minutes incline walking (Pace 4.0, Incline 7.0), 2 minutes of running (1st min at 6.5, 2nd min at 7.0)
Alternate the intervals for as long as you like! I did the interval workout for 20 minutes then hopped on the elliptical for 15 minutes. Boy, it was a sweaty one!
I was feelin’ oatty this morning! I haven’t made them in awhile and had some extra time on my hands.
My oatmeal bowl included:
- 1/3 cup old-fashioned oats
- 2 tsp. vanilla extract
- 1 tsp. honey
- Dusting of cinnamon
- Sprinkle of pecans
- Tiny blob Jif
- Tiny blob Peanut Butter & Co. cinnamon raisin swirl

I also enjoyed a perfectly ripe summer peach with a side of morning sunshine :).
Today is my long day at work so I’m praying it goes by in a flash! It’s such a nice day here too. The storms came through last night so the humidity is gone…for now! I may stop by Troy’s softball game tonight if I get outta here in time. Have a wonderful day everyone!

Last night’s dinner came straight out of my mom’s Martha Stewart Living magazine. Everything looks so darn delicious in these magazines! We decided to make the tomato basil pasta salad from the July issue. My mom hit up the grocery store AND a farm stand near our house yesterday so we had plenty of fresh ingredients on hand.
This pasta salad can be served hot, chilled or at room temperature. You can use any type of pasta for this dish. We chose campanelle because it looks fancy :). My mom cooked up the pasta first then we added the other ingredients:
- Farm stand tomato chunks
- Fresh basil
- Fresh mozzarella cheese
- Olive oil
- Salt and pepper
Toss everything together and eat! We served this simple and yummy summer salad with slices of fresh baguette.

We also had a handsome dinner guest!
We ate outside again tonight since it was such a beautiful evening. I love outdoor dining WITHOUT the bugs 🙂 (more about bugs later). I know I say this a lot but summer dishes really are the best. I wish I had access to such wonderful produce all year round!
Dessert was so yummy thanks to our friend Jo Ann! She came over before dinner to spend some time with my mom and brought along freshly baked chocolate chip cookies and homemade blueberry crumb cake. She always makes the best desserts!

I fell asleep around 8:30pm last night! I knew my body needed the extra sleep so instead of heading to BodyPump at 5:40am this morning, I’m going at 5:30pm tonight instead. I had extra time this morning to make a fabulous breakfast, but I loved yesterday’s breakfast so much, I decided to recreate it. I’m so interesting, aren’t I?
This morning’s yogurt bowl included:
- 1 cup Dannon vanilla
- 1/4 cup Kashi Autumn Wheat square
- 1/4 cup Honey Bunches of Oats with almonds
- 1 sprinkle of slivered almonds
- A few pecans
- Blueberries – not pictured, I added them after I snapped my pics! Sorry!
I had company for breakfast as well ;).

I’m not sure what kind of bug this is…maybe a green leaf bug?
My mom loves her Martha Stewart mags as well as Bon Appetit for their delicious recipes. The recipes are awesome but most take a lot of time to prep and cook – good weekend recipes! I’m still in school and for the most part, short on time! I’ve recently started to look into getting a magazine subscription or two. Maybe one with cooking/recipes and the other a fitness/healthy living magazine like Shape, Fitness or Health.

My throat is scratchy this morning, boo! That didn’t stop me from bounding out of bed at 5:15am to get to the gym. I took spinning from a new instructor this morning and he definitely had a better personality than yesterday’s instructor, but he was also about 75 years old…! He was pretty spry for his age and knew what he was talking about, but I definitely didn’t sweat like a beast like usual. My heart rate was elevated and I still broke a sweat so I’m a happy girl :).
When I arrived home, I was starving! I decided to bump up breakfast before my shower. I wanted a yogurt bowl pretty badly so I gathered my ingredients and got right down to business. This mornings yogurt bowl included:
- 1 cup Dannon vanilla (10g of protein!)
- 1/4 cup Kashi Autumn Wheat squares
- 1/4 cup Honey Nut O’s
- 1/2 cup blueberries
This cool,creamy & crunchy yogurt bowl hit the spot!
Come in real close for the good stuff :).
This breakfast was not only refreshing but it successfully replenished me after my workout. I love win-win situations :-D.
On my way to work, I saw my friend Lucy and her dog Ruby taking a nice morning walk. Ruby looked so happy to be out and about around town. It makes me really wish I had a dog :-(. We had a black lab when I was in high school that looked exactly like Ruby but she died when she was 5 years old due to doggie cancer. It was very sad. My parents plan on getting a lab puppy this fall when they get back from their trip to Italy. I won’t get to see the new puppy a lot since I will be living at school, but at least it will be there when I visit!
I’m going next door to buy a coffee because I need to wake up a little bit more! Working in downtown Saratoga definitely has its perks. Almost anything you could need or want is within a few blocks. Have a happy Tuesday!

We finally found another receptionist to work at the spa! It felt really nice to be able to leave at 3 instead of 7 :). Three hours makes all the difference in the world, I think. The temps are still hot here in NY but the humidity is way down. That definitely allows for a more enjoyable outdoor dining experience. Even though it’s in the 80s outside, we are having a hot dinner tonight! We still have leftover corn chowder from Friday night, so we decided to make a healthy version of corn chowder.
Into the pot went:
- 6 ears of fresh corn or 3 cups frozen whole kernel corn
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 1 tablespoon olive oil
- 14 oz. chicken broth
- 1 cup cubed potatoes (about 1 medium)
- 4 tsp. all-purpose flour (thickening)
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 1/2 cups milk (We used reduced-fat)
- 2 Tbsp. fresh parsley
There was the option of adding 3 strips of crispy bacon but we didn’t have any thawed. First, cook the onion and pepper then add the chicken broth and potato chunks. Bring to a boil then reduce to a simmer for about 10 minutes. Stir in the corn and cook (covered) for about 10 minutes more or until potato and corn are tender. Then, combine flour, salt and pepper and stir in milk. Cook until the chowda is thick and bubbly! Garnish with fresh parsley. In total, this recipe took 10 min. to prep and 20 min. to cook. Not too shabby!
This chowder was so good. It was thick but not heavy and the flavor was perfect. I love taking an unhealthy dish and putting a healthy spin on it :-D.
We also enjoyed a simple shrimp cocktail served on a bed of lettuce. These little shrimpies were good and chock full of nutrients!
I’m in love with my photographs tonight! We decided to eat outside on the deck since it’s neither hot nor humid. I think natural lighting is the key to successful pictures!

This morning I woke up bright and early at 5:30am, threw on my workout clothes, and headed to the gym. When I first arrived at the gym, the woman at the desk told me that 6am spinning had been canceled for today. I was kinda bummed but I decided to do my own cardio workout using the machines. On my way to the cardio machines, I ran into the spinning instructor. There was class after all! The cycling room is getting a new floor so the spinning schedule was changed around a bit. The bikes are now placed right next to a portion of the indoor track. It was a nice change of scenery and also quite entertaining to watch the people go by.
I love spinning at 6am, but not with this particular instructor. She is boring, plays bad music and has annoying little sayings that she says during class. Bleh! Thankfully, this was her last day teaching…I wonder why?! I can’t wait for the new instructor! Sounds mean to say, but in this case it’s necessary. I just don’t want to be subjected to an annoying person at 6am on a Monday morning :).
I quickly showered and got ready then headed to the kitchen – my favorite place :-D. I was a little short on time but I knew I wanted a fantastic breakfast. I can’t get yesterday’s pancakes outta my head! I opted for waffles with lots o’ toppings. Instead of taking the time to make waffles from scratch, I took two frozen Eggo’s (1 buttermilk and 1 multigrain) out of the freezer and popped them into the toaster while I packed my lunch and got my waffle toppings ready.
In less than 5 minutes, my breakfast was ready to eat!
I topped both of the waffles with a drizzle of honey from the honey bear, cinnamon, peanut butter, chopped walnuts and raspberries.
This breakfast was quick to assemble and delicious to eat!
A winning combination :).
I took my coffee to go this morning. I love Green Mountain coffee! My stomach doesn’t do well with bold coffee blends. The Green Mountain breakfast blend and flavored coffees are milder and they taste great. I’m still sipping on mine..I like to make it last :). Well, it’s back to work for this girl! I have an interesting question for you this morning and I’m curious to hear your answers.
Question of the morning: What is the worst experience you’ve had at the gym? – both group fitness classes and the gym itself. Whether it be with an instructor, a class you took, something embarrassing, funny, ridiculous or even appalling! I want to hear about it!
I answered a question similar on Julie’s blog a few weeks ago and it was hilarious to go through all the answers readers left. The most ridiculous thing I’ve ever witnessed at the gym was a man walking on the treadmill at a speed of about 1.0 while his arms were busy doing dance moves that you might see at a night club. He was also wearing shorty shorts and a man tank top with knee high socks. Very strange.
