Braciole Night

Before heading to work, I snacked on a nectarine and a piece of whole wheat toast with cinnamon raisin peanut butter 

LUNCH

While dreaming up today’s lunch this morning, I looked down and saw this little guy.

Avocado!

I decided to throw together an avocado salad and half a sandwich…why choose when you can have both?!   

Greens, veg and avocado drizzled with Paul Newman’s light Italian dressing 

1/2 turkey sandwich on whole wheat

Another nectarine, we have about 7 more in the house!

Chocolate-y sweetness

SNACK

Pre-BodyFit energizing snack!  Peanut butter crackers!  Probably one of the best snacks ever.

DINNER

Tonight’s dinner was a variation of Giada’s Braciole Recipe.  Instead of baking the rolled flank steak, we cooked it in the tomato sauce – so tender!  We also cooked up some spaghetti to go with the braciole.  The flavor of the sauce was enhanced by the meat so it was extra delicious!  Salad on the side.  

This recipe is a keeper!  Takes about an hour and a half total but most of it is waiting for the meat to finish cooking.

  • Sleep!
